Who we are?
Rita & Madison is a family owned company and farm. Since 1977, we have been cultivating chestnuts in the south of France. Our high-quality leading product is the chestnut flour. Later, we added a variety of baking ingredients like rye flour, organic agar powder and many more. Rita & Madison's priority is to provide the best chestnut flour and baking ingredients for you and your family. From authentic food lovers, to gluten free diets, our chestnut flour will make you completely satisfied.
Our Process
It’s been known that fresh chestnuts are harvested in the fall, between September 15 and November 15. Once the chestnuts are out of their shells and have fallen on the ground, the fruits are either picked manually or gathered with nets and vacuum cleaners. Once harvested, the chestnuts are separated by flotation in water and then sorted, sized and packaged before shipment. All production and processing operations are done in the PDO (Protected Designation of Origin) area, according to traditional methods.
The harvest and the milling process have been modernized but still using an ancient and artisanal method. The production of our chestnut flour has continued in the region; thanks to its exceptional quality. The marron Chestnut Flour has become, over the years, Rita & Madison’s brand image.
